The problem question will be some of your left over pepper that you were not able to use 3 days ago for cooking was gradually dying and showing  microorganism growth. How do you preserve it.

The best way tp answer the above question regarding the pepper  preservation to prevent the growth of microorganisms is through canning.

This is done by using a boiling water bath and one need to put the pepper in a  glass canning jars and then one need to heat the jars in a pot of boiling water. The heat is said to make the air from the glass jars frees the pepper from bacteria and microorganisms.
